Spanish style eggs

Method
  1. Boil potatoes for one whistle. Peel and cut into 1.5 cm cubes.
  2. Heat enough oil to deep fry potatoes until golden and crisp.Drain & keep aside.
  3. Heat 1 tbsp oil in a frying-pan and gently fry onion and garlic for 3 mins.
  4. Add the vegetables and fry for a further minute.
  5. Add tomatoes and parsley to pan and season with salt and pepper.
  6. Cover & simmer for 5 mins., stirring occasionally. Add tomato ketchup & mix.
  7. Return potato to pan & stir to coat in sauce.
  8. Make 4 wells in mixture & drop an egg into each. Cover & cook at low heat till the eggs are set.
  9. Serve immediately with crusty bread.
Ingredients:
675 gms potatoes
1 tbsp oil
1/2 onion (chopped)
1 clove garlic (crushed)
100 gms mixed Vegetables(Carrot, Beans, Broccoli), diced
1/2 tsp paprika
2 tbsp tomato ketchup
400 gms chopped tomatoes
1 tsp parsley (chopped)
4 eggs
Salt and ground black pepper
