Egg Bhurji

Method
  1. Break the eggs in a bowl and keep aside.
  2. Lightly heat oil in a kadai.
  3. Add onions and green chillies.
  4. Saute on a low flame till the onions turn pink.
  5. Add tomatoes and cook for five minutes on a medium flame.
  6. Add the powdered masalas and salt.
  7. Cook on a low flame till oil separates.
  8. Add the eggs and stir continuously till the eggs are cooked and form a mixture.
  9. Add coriander leaves and simmer for 2 minutes.
  10. Serve hot with rotis.
Ingredients:
5 - eggs
3 - medium sized onions (finely chopped)
4 - green chillies (finely chopped)
3 - medium sized tomatoes (finely chopped)
2 tsp - red chilli powder
2 tsp - coriander powder
� tsp - turmeric powder
5 tbsp - oil
handful of coriander leaves (finely chopped)
salt to taste
