Honey Almond Cake

Method
  1. Preheat the oven to 180°C.
  2. For the Dough:
    Mix the sugar and butter until smooth, add the flour, egg, a pinch of salt and a squeeze of lemon and beat it for a short while.
  3. For the Sugar Mixture:
    Melt the sugar, butter and honey together. (Note: do not cook the mixture).
  4. Mix the eggs with the ground ginger and cinnamon powder.
  5. Stir this into the warm honey and mix well.
  6. Mix the almond with the flour and add to the mixture.
  7. Put the sugar dough in a tart mould of 20 cm in diameter and place the mixture inside it.
  8. Bake for 25-30 mins. (until it turns golden brown)
Ingredients:
For the Sugar Dough:
50 g - sugar
100 g - butter
150 g - flour
1 - egg
salt and lemon to taste

For the Mixture:
15 g - sugar
35 g - butter
180 g - honey
120 g - eggs
20 g - flour
1 pinch - ground ginger
1 pinch - cinnamon powder
225 g - almond flakes
