Italian Spaghetti Souffle

Method
  1. Melt the butter in a pan and add spaghetti, salt and pepper.
  2. Mix then add the tomato sauce and stir until well coated.
  3. To make the sauce, melt the butter, add the flour, salt and pepper, then gradually blend in the milk.
  4. Cook, stirring constantly, until smooth, then remove from the fire.
  5. Add the cheese and beat the egg whites stiff and blend into the sauce. Do not over mix.
  6. Pour just enough of the mixture to cover the base into a greased soufflé dish.
  7. Add half the spaghetti mixture.
  8. Cover with half the remaining soufflé mixture. Repeat.
  9. Sprinkle top with crumbs and cheese and bake for 30 mins. in a moderate oven until well set and brown on top.
  10. Serve immediately.
Ingredients:
2 cups - cooked spaghetti
1 tbsp - mixed breadcrumbs and grated cheese
4 tbsp - tomato sauce
salt to taste
1 tsp - butter
1/2 tsp - pepper

For the Sauce:
3/4 cup - milk
4 - egg whites
3 - egg yolks
6 tbsp - grated cheese
1 tbsp - butter
1 heaped tbsp - flour
salt and pepper to taste
