Fry the potato alone in a little oil with salt till it is soft.
Crush the tomato with a spoon not as much as for puree. Similarly crush the ginger. Now mix all the ingredients including potato in a bowl.
Heat oil in a pan and fry it till the onions are soft and transparent and the eggs are golden brown. The tomatoes should also be really fried. Add enough salt.

Onion 1 medium sized chopped finely
Tomato 1/2 medium sliced
Ginger small piece
Coriander leaves a bunch without stem (chopped)
Coconut shredded 1/4 of a coconut
Potato 1/4 of medium sized grated with small blade of a grator
Chilli powder 1 tsp
