Waffles with Dates and Mascarpone

Method
  1. Combine syrup, water, sugar and butter in pan, stir over heat, without boiling, until sugar is dissolved.
  2. Bring to boil, remove from heat, cool.
  3. Transfer mixture to bowl, stir in egg yolk, then sifted dry ingredients, beat until smooth.
  4. Beat egg white in small bowl until soft peaks form, gently fold into batter.
  5. Drop about � cup of mixture into heated greased waffle iron.
  6. Close iron, cook about 1 minute or until browned.
  7. Repeat with remaining batter.
  8. For Date Syrup:
    • Cut ginger into long thin strips.
    • Combine ginger, water, sugar, juice and honey in pan, stir over heat, without boiling, until sugar is dissolved.
    • Add dates, simmer, uncovered, until dates are soft.
    • Stir in figs.
  9. For Honey Mascarpone:
    • Combine all ingredients in bowl.
    • Mix well.
  10. Serve waffles with Date syrup and honey mascarpone.
Ingredients:
� cup - golden syrup
2 tbsp - brown sugar
60 gm - butter
1 - egg, separated
� cup - plain flour
1 tbsp - ground ginger
� tsp - ground cinnamon
� tsp - bicarbonate of soda
� cup - water

For Date Syrup:
30 gm piece - fresh ginger, peeled
� cup - sugar
� cup - lime juice
1 tbsp - honey
12 - fresh dates, halved
4 - fresh figs, quartered
� cup - water

For Honey Mascarpone:
1 cup - mascarpone cheese
1 tbsp - honey
� tsp - ground cinnamon
