Aloo anda curry

  1. Chop onions, garlic, ginger and make past.
  2. Heat oil, add cardamom, cinnamon and red chillies. Add hard boiled eggs and fry a little. Remove from oil.
  3. Add onion and poppy seed paste. Fry till paste is red in colour. Add masalas and salt in 1/2 cup water, mix well and pour. Fry the masala and add green chilli and tomatoes. Fry the paste.
  4. Add fried potatoes, water and cook till potatoes are tender. Add egg halves and boil for 2 mins.
  5. Sprinkle coriander (chopped) and serve with roti or naan.

1 tsp ginger grated
2-3 green chillies
3 tsp coriander powder
1/4 tsp turmeric powder
1 tsp salt
3-4 black cardamom
4-5 cinnamon
2 tomatoes pulp
2 tbsp oil
1 tsp poppy seed paste
3 potatoes, fried pieces
