Method
Heat the oil in a frying pan and fry the onion, green chilli, capsicum and coriander leaves for 5 mins.
Add the chilli powder and pepper and fry for 1 min. more, then add the green peas.
Fry for another 5 mins. Beat the eggs well together and add salt.
Pour this mixture over the vegetables.
Cook until the omelette is set.
Remove the pan under a hot grill and lightly brown on top.
Serve immediately.
