Kaju - Pea Rissoles

Method
  1. Mix peas and coconut with salt, lemon juice, garam masala and kajus. Form rissoles of potato, filling centre with the pea mixture.
  2. Dip in eggs and roll in vermicelli, shallow fry till well browned.
Ingredients:
2 cups mashed potatoes,
2 beaten eggs,
salt,
� cup crushed vermicelli,
juice of 1 lemon,
mixed with 1 tsp. sugar,
1 cup boiled peas,
� cup grated coconut,
� tsp. garam masala powder,
oil for frying,
� cup chopped kajus,
lightly fried.
