Masala Rice in a jiffy

Method

  1. Heat oil in a skillet and add the cloves, cardamom, cinnamon, and bay leaf and fry a while.

  2. Add the onions and a little sugar (so the onions brown well) and saute till the onions are golden brown

  3. Add the ginger and garlic paste (the amount depends on you) and saute for 2-3 minutes.

  4. Add salt and the masala powders and stir.

  5. Add the chopped chillies and tomato / tomato paste and saute till you can see the oil separate (this is where you can add the optional ingredients).

  6. Now add the beaten egg along with the cilantro into this mixture and keep stirring continuously till the egg scrambles and the mixture turns a tad dry.

  7. Add the rice gradually and mix all the ingredients well.

  8. Turn off the heat. Mix in the ghee. Sprinkle the garam masala and serve hot !

Ingredients:

2 cups cooked rice
2 -3 Eggs, beaten well
1 Onion chopped fine
1 Tomato chopped fine/4 spoons of Tomato paste
Cooked Peas
2 Green Chillies, chopped fine
Ginger and Garlic paste
2 spoons chopped Cilantro
Jeera powder
Coriander powder
Chili powder
Pinch of Garam masala
2-3 Cloves
2-3 Cardamon pods
1" piece of Cinnamon
1 Bay leaf
1 spoon Ghee
Cooking Oil
Salt to taste

Optional Ingredients:

Half a Capsicum, cut in thin slices
Cooked Prawns
Cooked Cauliflower florets
