Chilli basil fish in clay pot

Method
  1. Pound the chillies, lemon grass, kafir lime leaves, basil leaves together and keep aside.
  2. Marinate the fish with egg and cornflour and deep fry in hot oil.
  3. Heat one tbsp. oil in a pan and stir fry the pound ingredients with sliced ginger, onions.
  4. Add stock, oyster sauce, fish sauce and bring to boil in clay pot.
  5. Add fish and finish with lime juice.
  6. Serve hot.
Ingredients:
10 gms. fresh galangal
1 egg for marination
1 tbsp. cornflour for marination
2 crushed fresh lemon grass
5 pieces kafir lime leaves
10 fresh red chillies
20 sweet basil leaves
4 chopped onions
1 cup stock water
180 gms. Sliced fish
3 tbsp. fish sauce
2 tbsp. lemon juice
2 tbsp. oyster sauce
