Fish creole

Method
  1. Heat the oil and butter in a non stick skillet. Add the onions, capsicum and garlic. Saute till the onions soften.
  2. Add the tomato, parsley, crushed stock cube, capsico sauce and chicken stock. Simmer, covered for 10 minutes.
  3. Add the fish and cook for another 5 minutes. Blend together the cornflour and 1 tbsp.Water. Stir into the fish. Cook, stirring carefully until thickened.
  4. Simmer for another couple of minutes so that the gravy coats the fish.
  5. Serve with fried rice.
Ingredients:
2 tbsp. refined oil
2 tbsp. butter
1/2cup chopped onions
1/2cup chopped capsicum
1 clove of garlic, minced
4 large tomatoes, blanched and chopped
2 tbsp. chopped parsley
1 chicken stock cube
1/4 tsp. capsico sauce
1 tbsp. cornflour
1 cup chicken stock
4 pieces of rohu fish
