MethodMint chutney:
1. Grind all ingredients together.
For the fish:
- Combine and mix all ingredients for marinade in a bowl.
- Add fish fillets, coat well with the marinade.
- Leave the fish to marinade for 30 mins. or 1 hour.
- Dip the fish in cornflour and plain flour batter and then coat the fish with fresh cornflakes.
- Deep fry in hot oil.
- Serve hot with extra mint chutney mixed in yoghurt.
Ingredients: 8 pieces boneless fish fillet
equal quantities of cornflour and plain flour mixed with a little water to make batter
1 cup finely crushed cornflakes
Oil for deep frying
For the marinade:
2 tbsp. mint chutney
2 tbsp. vinegar or lime juice
1 ½ tsp. red chilli powder
For the mint chutney:
1 bunch fresh mint leaves
4 green chillies
2 tbsp. vinegar or lemon juice
2 medium onions
1 tsp. cumin seeds
1 tsp. grated ginger
1 clove garlic
Salt to taste
