Mint chutney:
1. Grind all ingredients together.

For the fish:

  1. Combine and mix all ingredients for marinade in a bowl.
  2. Add fish fillets, coat well with the marinade.
  3. Leave the fish to marinade for 30 mins. or 1 hour.
  4. Dip the fish in cornflour and plain flour batter and then coat the fish with fresh cornflakes.
  5. Deep fry in hot oil.
  6. Serve hot with extra mint chutney mixed in yoghurt.
Ingredients:
8 pieces boneless fish fillet
equal quantities of cornflour and plain flour mixed with a little water to make batter
1 cup finely crushed cornflakes
Oil for deep frying

For the marinade:
2 tbsp. mint chutney
2 tbsp. vinegar or lime juice
1 ½ tsp. red chilli powder

For the mint chutney:
1 bunch fresh mint leaves
4 green chillies
2 tbsp. vinegar or lemon juice
2 medium onions
1 tsp. cumin seeds
1 tsp. grated ginger
1 clove garlic
Salt to taste
