Fish in banana leaves

Method
  1. Rub salt and lemon juice on fish fillets.
  2. Soften the banana leaf by keeping in a colander over boiling water for a few seconds. Grease one side of the banana leaf.
  3. Apply coriander chutney liberally on 3 fillets of fish. Sandwich them with other 3 fillets.
  4. Put the sandwiched fish pieces individually on greased banana leaves, tie with a thread.
  5. Steam in a colander for 45 minutes till the fish is cooked.
  6. Remove the thread and serve immediately with salad and sprinkled over with juice of lemon.
Ingredients:
6 Fillets of large Pomfret or any other boneless fish
Salt and pepper to taste
Juice of one small lemon
1/2-3/4 cup green coconut chutney
Banana leaf

For coriander chutney:
Grind the following together to make a fine paste and add 2 tbsp oil
2 cups coriander leaves (chopped)
1/2 cup fresh coconut (brown skin removed and grated)
Green chilli to taste
1 tsp cumin seed
2 tsp sugar (to taste)
1 tbsp lemon juice
