Fish in hot sauce

Method
  1. To make the sauce, combine garlic and ginger powder, soya sauce, sherry, salt, sugar and vinegar. Mix well.
  2. Scale and clean the fish keeping the head and tail on and slash sides diagonally at intervals.
  3. Heat oil for deep frying until smoky and fry the fish in it for 10 mins or until it is almost done.
  4. Drain and keep aside.
  5. Heat 1 tbsp. of oil, separately, till smoky and add to it the chilli sauce and the mixed sauce.
  6. Put in the fish and simmer for just one minute and serve hot.
Ingredients:
1 kg. Pomfret or any other mild tasting fish
2 tbsp. chilli sauce
Oil for deep frying

For the sauce:
1&1/2 tbsp. soya sauce
1/2 tbsp. garlic powder
2 tsp. sugar
1/2 tsp. ginger powder
3 tbsp. sherry
5 drops vinegar
1/2 tsp. salt
