*Combine 400 gms. tamarind with 1&1/4 cups hot water and Micro uncovered for 6 mins. on High, stirring once after 4 mins. Remove and let stand covered for 5 mins. Mash to loosen the pulp and separate the seeds. Pass the tamarind pulp through a fine sieve.

750 gms. skinned fillets of any kind of fish, cut into cubes, 4 cm. each
2 tbsp. oil
2 banana leaves, cut into 20 cm. squares
white thread
Grind to a paste:
1/2 cup chopped coriander
1 tbsp. chopped mint
4 seeded and chopped green chillies
1/2 cup grated fresh coconut
1 tbsp. lemon juice
1 tbsp. crushed garlic
2 tsp. jaggery
1 tsp. tamarind paste*
1 tbsp. cumin seeds
1 tsp. salt
