Patrani Macchi

Method
  1. Wash and clean the pomfret very well.
  2. Remove the eyes of the fish.
  3. Make a slit on the head of each fish.
  4. Pat each fish dry with a clean napkin.
  5. Smear some salt on the fish and keep aside for some time.
  6. In the meanwhile prepare the chutney.
  7. Grind all the ingredients for making the chutney into a fine paste.
  8. Smear this chutney on each fish adequately.
  9. Stuff some chutney into the head of the fish.
  10. Cut each leaf into squares keeping in mind that the squares should be big enough to wrap each fish well.
  11. Place the pomfret on the square leaf and wrap it well.
  12. To secure it, tie it with a string.
  13. Repeat the same with the other fish.
  14. Steam the fish for about 10 minutes.

To Steam Fish:

  1. Boil some water in a big vessel.
  2. Place a medium sized bowl with some water in a big vessel so that it stays in place.
  3. After the water boils place a sieve on the bowl (see to it that the water does not touch the sieve), arrange the fish on the sieve.
  4. Cover the vessel with a lid.
  5. Steam the fish for about 10 minutes on a medium flame.
  6. Serve the fish with chappat (rice flour chapatti).
Ingredients:
6 - small pomfret
3 - banana leaves
green chutney
salt to taste

For Making Green Chutney:
� - fresh coconut, scraped (large)
4 to 5 - green chilies
4 to 5 flakes - garlic
� tsp - cumin seeds
1 - medium sized bunch fresh coriander leaves (washed well and chopped)
� - medium sized bunch of fresh mint leaves (washed well and chopped)
� tsp - sugar
juice of half a lemon
salt to taste
