Smoked Salmon and Mozarella Rounds
Method
- Cut 5 cm (2-inch) circles from bread.
- Melt half the butter in pan; brush both sides of circles with butter and place on oven tray.
- Bake in moderate oven 10 minutes or until golden brown; remove and serve cool.
- Place remaining soft butter in bowl, add crushed garlic, mustard, parsley and chopped capers; mix well.
- Spread butter over one side of each circle.
- Cut 2.5 cm (1-inch) circles of smoked salmon and place on buttered side of circle.
- Cut 2.5 cm (1-inch) circles of cheese and place on top of smoked salmon.
- Arrange circles on baking tray, bake in moderate oven 10 minutes or until cheese melts.

125 g - butter
1 clove - garlic
1/2 tsp - french mustard
1 tbsp - chopped parsley
2 tsp - capers
4 slices - mozzarella cheese
4 slices - smoked salmon
