Spicy Salmon with Lemon Basil Rice

Method for Salmon
  1. Clean Salmon.Make marinade wiht chillil powder, turmeric powder ,salt and oil.
  2. Marinate fish for 3-4 hrs in the mixture.
  3. Bake in oven 350 deg F for 40 min (turning once in between) and broil for 5 more minutes.
  1. Heat 1 tbs of oil in a pan. Add the nuts and fry till golden brown.
  2. Add the red and green chilies. Add turmeric .Saute
  3. Add the Basil leaves and saute.(reserve some leaves for garnish)
  4. Turn off heat. Let it cool.
  5. Add the lime juice.
  6. Add the rice in small quantities and mix it in
  7. Add the rest of the oil and mix.
  8. Serve hot fish with rice. Lime slices and fresh basil make good garnish.

Ingredients:
For Salmon:
Fillet of Salmon - cut in to thin small slices- 4-6
Chili powder - 2 tbs
Turmeric Powder - 1/4 tsp
Salt - to taste
Oil - 2 tbs

For Tempering:
Seasame oil - 2 tbs
Groundnuts / Cashewnuts - 4 tbs
Red Chillies - 4-5 nos
Green Chillies (chopped) - 3-4 nos
Turmeric Pwd - 1 tsp
Fresh basil leaves (chopped) - 1 bunch

Other Ingredients:
Cooked Rice - 1 cup
Lemon Juice - 2 tbs
Salt
