Grilled herbed chicken

Method
  1. Marinate chicken in 20 ml. Oil, salt, pepper and thyme for 20 mins. Grill chicken until done. Sprinkle with oregano and set aside.
  2. Mash potatoes with butter, cream and some seasoning and cook until potatoes are fluffy. Set aside.
  3. To make the sauce: heat remaining oil in a pan and sauté onion, garlic and celery. Deglaze pan with stock and red wine and add salt, pepper, thyme and oregano.
  4. Add flour paste and cook until thick.
  5. Serve chicken and potatoes drizzled over with the sauce.
Ingredients:
400 gms chicken breasts
40 ml oil
Salt and pepper to taste
2 1/2 tsp chopped fresh thyme + extra for sauce
1 1/2 tsp oregano + extra for sauce
130 gms potatoes, peeled and boiled
50 gms butter
20 ml cream
100 gms onions, chopped
30 gms garlic, chopped
25 gms celery, chopped
130 ml vegetable stock
40 ml red wine
2 1/2 tbsp. flour, dissolved in a little water
