Method
- Cut the mutton into medium sized pieces.
- Clean and wash thoroughly.
- In a deep vessel, heat the ghee.
- Add the red and green chilies.
- Add the mutton pieces and cook on slow fire till the meat is tender.
- Add salt to taste.
- Serve hot with phulkas, parathas or rice.
Chef`s Note:
This recipe harks back to the days when the Maharajas went out for Shikar in the deep jungles.
Their entourage, chefs et al, went deep into the forests so their meal was usually the day’s kill. Hence the name Jungli Mutton.
