American Chopsuey

Method
  1. Heat 1 to 2 tbsp oil in a non-stick wok.
  2. Add cauliflower, carrots, French beans, veg or chicken stock, salt, pepper and aji-no-motto.
  3. Cook covered with a lid.
  4. Cook till the vegetables are half done.
  5. Add the chicken pieces, spring onions, cabbage, green chillies, tomato ketchup, chilli sauce, soya sauce, salt and sugar.
  6. Cook for 2 to 3 minutes.
  7. Add the cornflour mixture and mix well.
  8. Cook till the sauce thickens. Remove from gas.
  9. Saute the noodles in oil for 2 to 3 minutes.
  10. Place the noodles in a glass dish.
  11. Evenly pour half the prepared chicken-vegetable mixture on the noodles.
  12. Sprinkle some crispy noodles on them.
  13. Pour rest of the chicken-vegetable mixture on it.
  14. Garnish with some more crispy noodles and double fried egg.
Ingredients:
handful - boiled noodles
1 to 2 tbsp - oil (for sauting the vegetables)
2 tbsp - oil (for sauting the noodles)
1 cup - cauliflower (cut into small florets)
2 - carrots (cut into strips)
15 to 20 - french beans (cut into strips)
1/2 cup - chopped cabbage
2 - spring onions (sliced)
2 to 3 - green chillies (cut lengthwise)
1 - chicken breast (boiled and shredded)
11/2 cup - chicken/ vegetable stock
1 tbsp - cornflour (mixed with little stock)
1/2 tsp - aji-no-motto
salt to taste
1/2 tsp - pepper powder
1/2 tsp - sugar
4 to 5 tbsp - tomato ketchup
chilli sauce (as per taste)
1 tsp - soya sauce
1 - double fried egg (for garnishing)
