Yakhni Chawal Jehangir

Method
For Yakhni:
  1. Wash Yakhni - Broth, well and cut up meat.
  2. Place all the ingredients in a vessel and bring them to boil.
  3. Simmer gently till meat is cooked.

  1. First of all, wash and soak rice.
  2. Fry onions to a golden brown colour.
  3. Add spices and fry them.
  4. Add rice and fry.
  5. Add Yakhni and let it cook.
  6. When half cooked, add meat, cover with rice, cook on a slow fire until cooked.
  7. Serve hot with curry or raitas, garnished with silver foil.
Ingredients:
For Yakhni:
1 kg - mutton
2" - long piece of cinnamon
4 - cloves
6 pods - garlic
3 - green chillies
4 grains - black pepper
10 cups - water and salt to taste

For Rice:
250 gms - rice
3 - sliced onions
2 tbsps - onions (sliced)
2 tbsps - turmeric powder
1 tbsp - cumin seeds
1" - long cinnamon
4 - whole cloves
2 - cardamoms whole
3 - bay leaves
1 tsp - chilli powder
8 tbsps - ghee
4 - large silver foil
