Duck Tortellini with Tomato Basil Sauce

  1. Roll the pasta sheet thin for about 4-5 mm either in pasta machine or with the rolling stick.

For Pasta dough:
200 g - durum wheat
02 - egg yolk
1 - whole egg
15 ml - olive oil

For Tomato Basil Sauce:
200 g - tomato ripe
50 ml - tomato puree
a few basil leaves
30 g - grana padano cheese

For Duck filling:
150 g - roasted duck
50 g - cream cheese
01 sprig - thyme
salt to taste
pepper to taste
