Method
  1. Rinse beansprouts well with cold water.
  2. Peel and cut carrots into matchsticks.
  3. Thinly slice pepper, discarding seeds and core.
  4. Wash and trim spring onions, cut into 2” small wedges.
  5. Wash and thinly slice mushrooms.
  6. Cut pineapple into small wedges.
  7. Place all prepared ingredients into a salad bowl with prawns and mix well. Prepare dressing.
  8. Peel and very finely chop ginger if using, place in a small jar with remaining dressing ingredients.
  9. Shake well. Pour over salad just before serving.
Ingredients:
350 g - beansprouts
6 - spring onions
100 g - button mushrooms
2 slices - fresh pineapple
2 - carrots
1 - green pepper
100 g - peeled and cooked prawns

For the Dressing:
2 tsps - soya sauce
1/4 tsp - salt
1 tbsp - vinegar
2 tbsps - oil
good pinch - castor sugar
good pinch - dry mustard
good pinch - pepper
