Russian Salad

  1. First make mayonnaise sauce (mix yolk of egg with sugar, salt, musturd in a bowl and pepper mix well upto a cream texture); keep aside.
  2. Add salad oil drop by drop, keep beating nicely with a wooden spoon.
  3. As sauce gets thicker, moisture slightly with vinegar, keep adding salad oil and keep beating.
  4. Taste for seasoning and lastly add lime juice
  5. Peel potatoes, turnip and carrots and boil separately in salted water.
  6. Shell the green peas, string and cut french beans into 0.75cm pcs and boil till cooked.
  7. Mix all the boiled vegetables with mayonnaise sauce, pile over a bed of lettuce leaces.
  8. Decorate with sliced hot boiled eggs and slice tomato.
115g - potatoes
115g - carrot
55g - turnips
115g - green peas
55 g - french beans
1 - hard boiled egg
1/2 bunch - lettuce leaves
1 - tomato
2 - egg yolks
1 tsp - musturd powder
Sugar, a pinch
1 pinch - white pepper powder
Salt to taste
1 tsp - vinegar
130ml - salad oil
1/2 - lime
3 tsp - mayonnaise sauce
