Broccoli Salad

Method
  1. In a bowl, whip together mayonnaise, sugar and lemon juice.

  2. Add broccoli, pieces of chicken breast, raisins and chopped almonds and stir well.

  3. Chill and serve.

Vegetarians could omit the chicken and add roasted Potatoes and/or Sweet Potatoes.

Ingredients:

1 bunch of Broccoli chopped into bite sized florets
1 cup each golden Raisins and Almonds (chopped)
250 gms. boneless Chicken breast, poached
2 cups Law Fat Mayonnaise
Sugar to taste
1 tbsp.Lemon Juice
