Crabmeat and Chicken Salad

Method
  1. Steam chicken, spring onion and ginger for about 20 mins.
  2. Let chicken cool slightly and shred into long bitesize pieces.
  3. Crumble the crabmeat into flakes.
  4. Remove any tough string from snow peas and blanch quickly 1 to 2 mins.
  5. Rinse them in cold water and drain well.
  6. Cut mushrooms though steam and crown into 2 to 3 slices.
  7. Sprinkle them with lemon to keep the colour.
  8. Combine ingredients for dressing and mix well.
  9. Spread lettuce leaves on a plate.
  10. Toss snow peas, mushrooms, chicken and crabmeat together lightly and place them on top of the lettuce.
  11. Pour dressing on before serving.
Ingredients:
100 g - boneless chicken breast
2" pieces - spring onion
1 slice - fresh ginger
100 g - crabmeat
12 - snow peas
6 - button mushrooms
1 tbsp - lemon juice
5 - lettuce leaves

For the Dressing:
1/2 tbsp - dry mustard
1 tbsp - vinegar
1/2 tbsp - sugar
1/4 tsp - salt
1 tbsp - sesame oil
few lettuce leaves
