Method
- Cover potatoes with water in a saucepan with 1 tsp. of salt and cook until skins start to break and with a
fork slips through easily.
- Remove from heat, drain water, cover potatoes with cold water, drain again and set aside to cool.
- Boil the eggs for 10 mins. and shell them. Mince the onions finely.
- Peel the potatoes, cube them and cut them in a bowl.
- Sprinkle with 1/4 tsp. salt and pepper.
- Chop three of the hard boiled eggs thinly and garnish the salad with these egg slices before serving.
