Aattu kaal means goats leg in Tamil . Well , this dish is a thin spicy soup made with trotters . My grand mother would boil the soup through out the night , simmering in a fire wood stove and proceed with the soup the next morning . The soup would have a smoky flavour infused into it . But now a days the pressure cooker does the over night job in a few minutes . What ever , the aroma of my grand mothers soup is yet to be beaten by our instant cooking we follow now a days .

  1. Pressure cook the trotters along with turmeric powder , coriander power , cumin powder , pepper powder , small onions and garlic in low flame for 10 -15 whistles with water 1/2 inch above the trotters .
  2. The trotters flesh should fall apart from the bones and while eating the flesh should dissolve in your mouth .
  3. Add salt , taste and adjust . Heat ghee , add cinnamon , cloves and small onions . Sauté for a minute until the onions are brown and pour over the trotters soup . Mix well , garnish with chopped coriander leaves and serve hot with arisi maavu rotti ( rice flour pathiri / roti ) .
  4. Notes: Very important that the trotters is cooked well that the flesh falls apart from the bones .
Ingredients:
4 legs cleaned trotters ( goats legs ) ( each leg cut into 3 pieces )
100 grams garlic cut into rounds
Small onions - one hand full cut into rounds + 5 chopped to fry and season
2 tbsp ghee
1 inch cinnamon piece
2 cloves
1 tbsp coriander powder
1/4 tsp turmeric powder
1/2 tsp cumin powder
3 tsp black pepper powder to taste
Salt to taste
Coriander leaves few chopped
