Aattu kaal means goats leg in Tamil . Well , this dish is a thin spicy
soup made with trotters . My grand mother would boil the soup through out
the night , simmering in a fire wood stove and proceed with the soup the
next morning . The soup would have a smoky flavour infused into it . But
now a days the pressure cooker does the over night job in a few minutes .
What ever , the aroma of my grand mothers soup is yet to be beaten by our
instant cooking we follow now a days .
Pressure cook the trotters along with turmeric powder , coriander power ,
cumin powder , pepper powder , small onions and garlic in low flame for
10 -15 whistles with water 1/2 inch above the trotters .
The trotters flesh should fall apart from the bones and while eating the
flesh should dissolve in your mouth .
