Chicken, Mushroom and Snow Peas Stew

Method
  1. Cut the chicken breast into 3 cm cubes.
  2. Heat oil in a deep non stick pan.
  3. Add star anise and garlic.
  4. Fry till garlic is drark brown.
  5. Add leeks and fry for 1 minute.
  6. Add chicken stock and breast.
  7. Simmer till chicken is half cooked.
  8. Add mushroom and snow peas.
  9. Simmer till chicken and vegetables are cooked.
  10. Add tomatoes puree, Soya sauce, salt and pepper.
  11. Simmer for 2 more minutes.
  12. Place 2 Tbsp of cooked pasta in serving bowls and top with the stew.
  13. Serve hot.

Ingredients:
chicken breast (boneless) - 750 gm
olive oil - 2 tbsp
star anise - 2
garlic - 2 tsp, minced
leeks - 3, sliced
button mushroom - 250 gm, sliced
snow peas - 200 gm, trimmed
chicken stock - 2 cup
tomatoes puree - 4 tbsp
soya sauce - 1 tbsp
low GI pasta to serve
pepper to taste
salt to taste
