Cream of Cauliflower soup

Method
  1. Cook cauliflower and corn till just tender and add a pinch of salt to the water.
  2. Drain and keep aside 2 tbsp of the water.Heat butter, fry onion lightly, add the 2 tbsp of water. Stir well.
  3. Put into a blender together with the cooked cauliflower and corn.
  4. Slowly mix egg yolks with milk and add to the soup. Mix till smooth.
  5. Pour through sieve, return soup to low fire and stir continuously. Do notlet it boil.
  6. Add salt and pepper.
  7. Serve garnished with croutons.
Ingredients:
500 gm - cauliflower broken into florets
2 - onions chopped
100 gm - butter
2 egg - yolks
2 tbsp - corn grated
1 - cup milk

Salt:
Freshly ground pepper
Croutons (fried bread) for garnishing
