Method
- Melt butter, add onions, thinly sliced, brown these evenly, then add the mutton stock, salt and pepper.
- Simmer for 15 mins.
- Butter lightly 6 slices of bread and cut into squares.
- Sprinkle grated cheese on them and grill.
- Pour soup into bowls and float bread squares in each.
- Sprinkle additional grated cheese and serve piping hot.

4 tbsp - butter
2 cups - onion
6 slices - bread
