Method
  1. Heat the ghee and add the cloves, cinnamon and chilli powder.
  2. Add the meat and saute over high heat, till a little opaque.
  3. Add the yogurt and continue sauteing over high heat till well mixed.
  4. Lower the heat and simmer covered, till fat separates, stirring occasionally to avoid scorching.
  5. Add water to cover the meat well and bring to a boil, then simmer over low heat, till meat is tender.
  6. Add the salt, garam masala and kewra.
  7. Adjust the water according to the consistency you desire, and serve hot.
Ingredients:
1 kg - mutton, cut into curry sized pieces, marinated with ginger & garlic paste for an hour
1 cup - yogurt
1/2 cup - ghee
1 tbsp - ginger paste
1 tbsp - garlic paste
6 - cloves
1/4 tsp - cinnamon, broken small
1 tsp - chilli powder
1 tbsp - salt or to taste
2 tsp - garam masala
1 tsp - kewra essence or water
