Shrimp fried rice and sausage frittata

Method
  1. Beat the eggs, add the remaining ingredients, including cooked shrimp fried rice and mix well.
  2. Pour the mixture into baking dish & bake at 375 deg for 25 mins.
  3. Then, broil for 5 mins to brown the top.
Ingredients:
3 cups shrimp fried rice
2 cups chopped cooked shrimps & sausages
2 cups chicken stock/broth (if you're using orzo & not the fried rice)
6 eggs
1/3 cup ricotta cheese
1/4 cup sour cream
1 cup chopped scallions for a mild onion flavour (else use any onions)
1/4 cup chopped parsely
1/4 cup chopped roasted red peppers/capsicum
Salt & pepper to taste
