Brinjal with Prawns

Method
  1. Cut the brinjal into small square pieces.
  2. Sprinkle some salt and keep aside to remove excess water.
  3. Put some oil in a fry pan and fry the brinjal until it softens (5 min).
  4. Keep aside
  5. Put the rest of the oil in the fry pan and fry the onions� and garlic until it becomes translucent
  6. Add the prawns and tomatoes and fry for 5 min
  7. Add the sweetcorn peas and fried brinjal and continue frying
  8. Add coriander powder, soy sauce, salt to taste
  9. Stir until all the ingredients are tender
  10. Add allspice
  11. In the end whisk an egg and add it to the pan for binding (optional)

Ingredients:
Brinjal: 500g
Prawns: 500g
Sweet corn: 100g
Peas: 100g
Onion: 2 small (finely chopped)
Garlic: 1 tsp
Tomato: 2
Egg: 1(optional)
Soy sauce: 1tbsp
Coriander powder: 1tsp
Allspice: 1 tsp
Red Pepper flakes: 1 pinch
Vegetable oil: 3 tbsp
