Lamb Stuffed Brinjals

Method
  1. Preheat the oven to 200 C. Peel strips of skin of the brinjal, if preferred leaving the neck of the brinjal on.
  2. Heat some of the oil in a pan and fry the brinjals until lightly browned, then lift out and set aside.

    Prepare the stuffing :

  3. Heat the olive oil in the same pan, add the onions and fry them until brown.
  4. Add the minced meat, season with the cumin, all spice, salt and pepper then add the pine nuts.
  5. Slice open the brinjals and fill them with the meat and onion mixture. Place them in an ovenproof pot or dish.
  6. Heat water in a separate pot and add the tomato paste. Let it boil and carefully pour it over the stuffed brinjals.
  7. Season with salt and both peppers.
  8. Top each brinjal with a slice of tomato, then place in a pre-heated oven for 25mins. or cook on a low heat until the brinjals is just tender but not soft.

Ingredients:
750 gms brinjals
baby or oval
1 tbsp olive oil
For stuffing:
1 onion chopped
1 tbsp olive oil
200 gms. minced lamb meat
1 tsp cumin
1 tsp allspice
salt and pepper to taste
2 tbsp pine nuts
For the sauce:
1&1/2 cup hot water
75 gms tomato paste
1/2 tsp white pepper
1/2 tsp black
pepper
