Shrimp Noodle Soup

Method
To prepare the prawns:
  1. Chop all the vegetables in small cubes or dice. Heat a separate wok or pan.
  2. Add the oil when the pan is hot.
  3. Add the garlic and stir-fry until brown.
  4. Add the vegetable stock.
  5. Bring it to boil and simmer for 10 mins.
A few minutes before serving, add prawns and vegetables to the boiling stock and cook (about 45 mins. only). Add the glass noodles, salt and pepper to taste, soya sauce and garnish with finely chopped spring onions.

Serves 6

Ingredients:
200 gms. glass (transparent) noodles
6 big prawns, cleaned, shelled and deveined
1 tbsp. corn oil
5 fresh garlic cloves, finely chopped
salt and pepper to taste
6 cups vegetable stock or water
3 tbsp. soya sauce.

Vegetables :
� cup celery, finely chopped
� cup cabbage, finely chopped
2 stalks spring onions, finely chopped

Garnish :
1 stalk spring onions, finely chopped.
