Method

1. Sieve flour and baking powder. To the scalded milk, add butter and vanilla essence. Beat only the yolks until very thick, slowly beat in sugar. Immediately add sieved ingredients and mix for just a second.

2. Gently stir in scalded milk mixture. Pour batter and bake in a greased pan in moderate oven at 375ºF for 35-40 mins. Cool well.
