Shahi Cheese Mutton Chops

Method
  1. Combine evaporated milk, mutton chops and chopped onions.
  2. Bring to boil.
  3. Simmer, covered, on low heat for 30 mins or till meat starts to separate from bone and no liquid remains.
  4. Remove meat from all the bones and mash it well.
  5. Keep aside.
  6. Reserve 12 clean rib bones and discard remaining bones, if any.
  7. Remove and discard the top joint from the reserved 12 ribs.
  8. Combine meat, mashed potato, green chillies, coriander leaves, lemon juice, garam masala, cheddar cheese and salt.
  9. Mix well. Divide into 12 portions.
  10. Wrap a portion around the top of each of the 12 reserved ribs to form an oblong chop, leaving 3 cm of bone free.
  11. Dip each chop in beaten egg.
  12. Coat with breadcrumbs.
  13. Heat oil in a wok (kerahi).
  14. Fry a few chops at a time on medium heat, till well browned on all sides.
  15. Serve hot with mint chutney or tomato sauce.
Ingredients:
Evaporated milk - 1 cup
Single mutton chops - 500 gms
Chopped onions - 1/4 cup
Mashed potatoes - 1.75 cup
Seeded and finely chopped green chillies - 1 tbsp
Chopped coriander leaves - 1/2 cup
Lemon juice - 2 tbsp
Garam masala - 1 tsp
Grated cheddar cheese - 1 cup
Salt to taste
Egg, well beaten - 1
Dried bread crumbs - 1/2 cup
Oil for deep frying
