Stuffed Tomato Bonda

Method
For Vegetarian Filling:
  1. Heat oil in a fry pan.
  2. Add mustard and black gram dal.
  3. When the mustard crackles, add green chili and onion and garlic.
  4. When onion is light brown add carrot. Cook for 2 minutes.
  5. Add chili and turmeric powder. Fry for few seconds.
  6. Add potato, peas and salt.
  7. Mix well and remove from fire.
  8. Add coriander leaves.

For Mutton Filling:

  1. Heat oil in a fry pan.
  2. Add onion, ginger and garlic. Fry till fragrant.
  3. Add all the powders and minced mutton. Add salt.
  4. Cook stirring till mutton gives out liquid.
  5. Cover the pan and leave on low heat till mutton is cooked.
  6. Stir in the potato, coriander leaves and lime juice.
  7. Mix well and remove from fire.

Coating Batter for Bondas:

  1. Combine all the ingredients together.
  2. Add enough water to form thick coating batter.

To Prepare Bondas:

  1. Take 4-5 ripe but firm tomatoes and cut into halves.
  2. Carefully scoop out the center.
  3. Fill the tomato cups with one of the filling.
  4. Dip in coating batter and deep fry in hot oil.
  5. Serve hot with chutney.

Note:

  • Choose medium size ripe but firm tomatoes.
  • Stuff with vegetarian or non vegetarian filling given below.

Makes: 8-10 bondas

Ingredients:
For Vegetarian Filling:
potato - 1 cup, boiled and lightly mashed
green peas - 1/2 cup, cooked
coriander leaves - 1 tbsp, chopped
black gram (urad) dal - 1 tsp
green chili - 2 to 3, chopped
onion - 1/2 cup, chopped
garlic - 2 flakes, crushed
carrot - 1/2 cup, grated
turmeric powder - 1/2 tsp
chili powder - 1/2 tsp
oil - 2 tbsp
mustard - 1 tsp
salt to taste

For Mutton Filling:
minced mutton - 250 gm
mashed potato - 1/2 cup
coriander leaves - 2 tbsp, chopped
oil - 2 tbsp
onon - 1 cup, minced
ginger - 1/2 tsp, minced
garlic - 1 tsp, minced
chili powder - 1 tsp
coriander powder - 1 tsp
turmeric powder - 1/2 tsp
garam masala - 1/2 tsp
lime juice to taste
salt to taste

Coating Batter for Bondas:
chick peas flour (besan) - 1 cup
rice flour - 1/2 cup
fenel (suanf) - 1 tsp, crushed
cooking soda - 1/2 tsp
chili powder to taste
salt to taste
