Basic Muffins

Method
  1. In a large mixing bowl stir together the flour, sugar, baking powder and salt. Make a well in the centre.
  2. Combine egg, milk and oil. Add egg mixture all at once to flour mixture.
  3. Stir just till moistened, butter should be lumpy.
  4. Grease muffin cups or line with paper bake cups, till 2/3 full.
  5. Bake in a 400�oven for 20 to 25 mins. or till golden brown.
  6. Remove from pans; serve warm.

Makes: 10 to 12 muffins.

Note:

  • If you want to prepare Date-Nut Muffins: Prepare basic muffins except fold 2/3 cup coarsely chopped pitted dates and 1/3 cup chopped walnuts into the batter.
  • If you wish to prepare Cheese Muffins: Prepare basic muffins, except stir � cup shredded cheddar cheese into the batter.

2 � tsp - baking powder
� tsp - salt
1 - beaten egg
