Method
- In a large mixing bowl stir together the flour, sugar, baking powder and salt. Make a well in the centre.
- Combine egg, milk and oil. Add egg mixture all at once to flour mixture.
- Stir just till moistened, butter should be lumpy.
- Grease muffin cups or line with paper bake cups, till 2/3 full.
- Bake in a 400�oven for 20 to 25 mins. or till golden brown.
- Remove from pans; serve warm.
Makes: 10 to 12 muffins.
Note:
- If you want to prepare Date-Nut Muffins: Prepare basic muffins except fold 2/3 cup coarsely chopped pitted dates and 1/3 cup chopped walnuts into the batter.
- If you wish to prepare Cheese Muffins: Prepare basic muffins, except stir � cup shredded cheddar cheese into the batter.
