Prawn coconut curry

Method
  1. Warm ghee in a pan, and when very hot add garam masala and fry for a few mins.
  2. Add sliced onions and fry to golden brown.
  3. Then add ground onions and the next two ingredients and continue frying until masala is well fried but does not stick to the pan.
  4. Add the prawns and stir thoroughly with the masalas and cook for just a few mins before adding the 1 cup thin coconut milk.
  5. Add sugar and salt to taste.
  6. Simmer over brisk flame until the gravy is less than half.
  7. Then add the 1 cup thick coconut milk and cook another ten minutes when the curry is ready.
Ingredients:
500g prawns, shelled and cleaned
2 medium onions, sliced fine
2 onions, ground to a paste
3 tsp ground turmeric paste
1 tsp. chilli paste
2 bay leaves

Garam masala:
2 sticks cinnamon, 2 cardamoms and 4 cloves
2 tbsp Ghee
Salt to taste
1 tsp sugar
1 coconut from which 1 cup thin milk and 1 cup thick milk is extracted
