Prawn vindaloo

Method
  1. Heat oil in a deep heavy pan.
  2. Add the next seven ingredients after prawns.
  3. Fry for several minutes.
  4. Add vinegar and the prawns.
  5. Keep frying until all the vinegar is absorbed.
  6. Add water and let it come to the boil.
  7. Add salt and sugar
  8. Simmer for 20 mins. or until the water is reduced by about a quarter and the prawns are cooked. Remove from heat.
  9. Reheat before serving.
Ingredients:
1 kg cleaned prawns
1 tbsp turmeric paste
2 tsp Chilli paste
1 tsp. coriander paste
1 tspcumin paste
2 tsp ginger paste
½ tsp garlic paste
1 tsp mustard paste
Salt to taste
2 tsp sugar or to taste
3-4 tbsps. Vinegar
100g mustard oil
2-3 cups water
