Chicken Cheese

Method
  1. Rub the chicken joints with salt and pepper, and then fry in butter till golden brown. Remove and put the chicken into a baking dish.
  2. Heat the ghee and sauté the onion.
  3. Add the milk and simmer gently. Strain.
  4. Blend the cornflour with a little cold water and a little of the milk sauce and mix well.
  5. Add this cornflour mixture to the remaining milk sauce. Bring to the boil.
  6. Add vinegar, sugar, salt, pepper, mustard powder and cream.
  7. Pour this sauce over the chicken. Sprinkle with grated cheese.
  8. Bake in a moderate oven (177oC) until chicken is tender.
Ingredients:
4 joints - chicken
1 - medium sized onion (chopped)
1/2 ltr - milk
1 tbsp - corn flour
8 tbsp - grated cheese
butter for frying
a pinch of mustard powder
1 tsp - sugar
1/2 cup - cream
2 tbsp - vinegar
3 tbsp - ghee
salt and pepper to taste
