Chicken Mulligutwanny Curry

Method
  1. Joint the chicken and simmer gently with the next seven ingredients for about 10 minutes.
  2. Roast red chillies and Bengal gram separately.
  3. Grind together the next seven ingredients, from Kashmiri chillies to turmeric, to a smooth paste.
  4. Make two extracts of coconut milk.
  5. Add second extract and ground spices to chicken and cook till tender.
  6. Add first extract of coconut milk and bring to boil. Remove.
  7. Add lime juice. Temper.

Ingredients:
1 kg - chicken
3 - small onions, sliced
6 flakes - garlic, sliced
1 inch piece - ginger, sliced
Cinnamon a small piece
4 - tomatoes
Curry leaves a few
2 tsp - salt
2 - Kashmiri chillies
2 tsp - coriander seeds
1/2 tsp - cumin
1/2 tsp - fennel
20 - peppercorns
2 tsp - split Bengal gram
1/4 tsp - turmeric
1/2 - coconut
1 - lime

For tempering:
2 tsp - clarified butter
1 - red onion
