Kozhi Chinthamani (Chicken Chinthamani)

  1. In a Dutch oven or enameled cast-iron casserole, heat the oil.
  2. Add the onion and cook until it is brown around the edges for about 7 minutes.
  3. Add finely chopped red chillies and fry till the oil changes its color to red.
  4. Add chicken, close and cook till chicken is cooked, stir occasionally.
  5. Suites best with rice.

Add a tbsp of water if the chicken is not tender.

500 g - boneless chicken (finely chopped)
20 - dry chillies (as required)(finely chopped remove seeds)
300 g - small onions (finely chopped)
oil for frying onions
