Method
- For the honey dressing, combine the honey, lemon juice and vinegar.
- Season to taste and set aside.
- Place the chicken in a bowl with the oil and chilli, and toss to coat.
- Halve the lemon grass diagonally to form a point and thread the chicken onto it.
- Cook on a pre-heated hot barbecure or grill pan for two to three minutes or until cooked through.
- To serve, top the lettuce leaves with skewers and spoon over the dressing.
Variation:
Use beef skewers and thread onto rosemary sprigs instead of lemon grass.
Replace the chilli flakes with crushed garlic.
