Mulligatawny Soup

Method
  1. Clean and boil the chicken or mutton until tender.
  2. Blend into puree, adding water as required. Strain.
  3. Heat oil. Add onions and garlic and saute until golden brown.
  4. Add the paste and saute for 1 min.
  5. Pour the strained soup alongwith chicken stock and coconut milk and bring to a boil.
  6. Sprinkle lemon juice and serve hot.
  7. Garnished with rice and lemon wedges.
Ingredients:
Chicken or mutton (boneless) - 500 gms
Large onion, chopped - 1
Garlic cloves - 2
Coconut milk (optional) - 1 cup
Chicken stock/stock cubes dissolved in 2 cups of water - 2 cups
Lemon juice - 2 tsp
Oil - 2 tbsp
Salt to taste

Make paste of:

Ginger - 1
Cumin seeds - 1/2 tsp
Poppy seeds - 1 tsp
Turmeric powder - 1/2 tsp
Coriander seeds - 1 tsp
Peppercorns - 10
Red chilli (dry) or to taste - 6
Lemon wedges to garnish
Boiled rice for garnish (optional)
