Spicy Chicken Rice

Method
  1. Blend the green chillies, coriander and fresh ginger in a paste and add to the yogurt.
  2. Mix well and marinate the chicken pieces for at least 8 hours in the fridge. (for best results marinate chicken overnight).
  3. Heat oil and add the crushed red chillie flakes and the diced onion.
  4. Cook until the onions become golden then add cumin powder, turmeric and salt. Cook for 3 minutes.
  5. Add the chicken including the yogurt marinate.
  6. Cook for 35-40 minutes until the chicken is well cooked.
  7. Add the cooked rice and mix well.
  8. Garnish with fresh coriander and serve hot.
Ingredients:
1 - whole chicken with skin removed and cut in small pieces.
5 tbsp - plain yogurt
5 - green chillies
1/2 bunch - coriander
2 tsp - fresh ginger
1 tsp - crushed red chillies
1 tsp - cumin powder
1/2 tsp - turmeric
1 - onion finely chopped
2 cups - cooked basmati rice
salt to taste
3 tbsp - vegetable oil
